Ingredients
- Sweet pastry case
- 250g blackcurrants (or fruit of your choice)
- 75g unsalted butter (softened)
- 150g caster sugar
- 150g ground almonds
- 2 eggs (beaten)
Serves 6
Method
Preheat the oven to 170˚C / 375˚F / Gas mark 5.
In a large mixing bowl, put together the butter, sugar, almonds and eggs.
Whisk until they turn into a paste.
Add the fruit and stir until evenly combined.
Put the mixture into the pastry case and smooth until spread evenly.
Put the case onto a baking tray and place in the oven for 30 minutes.
Delicious warm or cold!
